Things tend to fall to pieces before they come together. Then suddenly, the growing pains sprout new blooms.
My life has been and remains a testament to this cycle, and probably will be as long as I live, or at least, as long as I continue to challenge my own existence.
At the beginning of June, I turned 28, officially accepted a job offer, and began to feel at home in St. Augustine.
I think everyone who moves somewhere that isn’t their home and embarks upon an entirely new existence, goes through times when they love their surroundings, and times when they want to get the hell out and retreat, regardless of how things are going on the surface.
Happily, after ten months of feeling constantly back and forth, I can wholeheartedly say I’ve reached a breakthrough point. I still miss my family every damn day, but I am consistently feeling at home and at peace here in St. Augustine, more than I feel when I do return to my home town. This has resulted in a huge turning point for my pysche.
Reality—we all exist within the confines of complex human bodies. Regardless of shape or size, we are all comprised of bones, flesh, blood, and teeth.
While our spirits may be infinite, we rely on these physical forms to carry us throughout our daily activities. To keep our bodies functioning at their best, it is up to us to feed ourselves what we need to thrive and heal, rather than merely survive, or breakdown. This is my ultimate motivation and drive for supplying my body with plant-based food that is as close to its natural form as possible.
Going vegan at the start of my 20s, coupled with a move toward mindfulness and reevaluating my relationship with food, turned my life around for the better. Still, I am not here to say choosing to eat only plants is a magical shield, nor am I wearing some sort of invincibility cloak. The truth is, everyone gets worn down sometimes.
Even us vegans get sick.
Although it has only been a number of days, in some ways it feels like a lifetime since my Six Months on the Run and Six Month Recipe Recap posts. Just after I spent time recapping, it was time to pack the van and I was off and away to St. Augustine. Needless to say, it’s been a whirlwind for the past 11 or so days (not to mention all the days leading up to the move) but as I kick off my second full week in St. Augustine, I figure what better time to take a breather and offer a brief rundown of recent events.
Note: I realize I’ve broken my own Two Day Rule during this moving period. I decided allowing my brain, body, heart and spirit time to adjust to the move and calling a timeout felt much needed.
Moving Day + Labor Day Weekend
If you ever decide to move across the state, or country even, don’t have many belongings and feel a truck or trailer might be a waste of resources, consider renting a van. All of my material possessions (bed, keyboard and bike included) fit nicely in this commercial van rented from Enterprise, with room to spare. I was even able to fit a dining room table to deliver to Andrew. Win!
Monday, September 1, marks six months since the launch of Vegan on the Run. With VOTR six months strong, I feel it’s only fitting to revisit some of the highlights from the past six months, beginning with my “On the Run” out of town adventures. Complete with each recap are photos that didn’t quite make the blog the first time around.
March // St. Augustine Spring Breakin’
Ah, my St. Augustine Spring Break trip. Just a few short weeks after launching Vegan on the Run, while in the heart of marathon training, I ventured over to the oldest city to take advantage of a change of scenery and reunite with a friend I had not seen in many moons (Andrew). Little did I know before departing for St. Augustine, this trip would mark the beginning of a relationship. Not only did it kick off countless return visits to St. Augustine, it set the stage for a move.

The cat’s out of the bag. I’m moving across the state from the upside of Florida (Pensacola) to the other side of Florida (St. Augustine) in just three short weeks.
I began falling for St. Augustine (and one of its inhabitants) back in March during my spring break visit and have been back and forth across the state quite a few times since. And well, the rest is history.
What do you cook when you are visiting someone afar and working out of a foreign kitchen that is less than stocked with any bare necessities, much less extra goodies, and you’ve volunteered to prepare a vegan dinner for a group of four that has quickly grown to be seven? I just so happened to be greeted with this welcomed scenario Monday night, in St. Augustine. The result appeared as follows.
Seriously, who knew America’s oldest city was so good to the vegans? (Now this vegan does!) Little did I know when I whisked myself off on a solo expedition to the opposite end of my Florida home state for the weekend to give myself a “Spring Break” of sorts, and enjoy the company of another, I would be driving straight into a vegan mecca. While having a veg-adventure is always in the forefront of my mind, and I can spot a vegan ‘v’ from a mile away, this particular getaway did not have food as the ultimate goal. Sure, there were a couple of places I knew I wanted to check out while I was in town. To my pleasant surprise, nearly everywhere I looked, there was vegan goodness to be had.
