Archives For Southern vegan cuisine

Sure, there are countless vegetables you can eat at any given moment in time. While eating any vegetable is better than eating no vegetable at all, seasonal varieties growing in your region are your absolute best bets. Currently here in Florida, it’s the season for nutrient rich root and cruciferous vegetables and leafy greens. Here’s a quick look at how to get your fill of some of my favorite winter picks.

ROOT VEGETABLES

Don’t be intimidated by earthy root vegetables or fooled into thinking they are too much work. With just a little washing and chopping, root vegetables can be enjoyed a number of ways.

When a friend mentioned the upcoming Northeast Florida Veg Fest, set to take place in nearby Jacksonville, on Saturday March 7, I immediately marked my calendar. Since this would be our first ever Veg Fest (me + Andrew), we were both eager with anticipation as we counted down the days.

What’s Veg Fest all about? If you aren’t familiar with such festivals, Veg Fests are dedicated to local, sustainable, eco-friendly, compassionate, organic, healthy and humane organizations and businesses. In short, a dream festival for this vegan. Known for their tasty samples and vegan treats, Veg Fests are also family-friendly events, open to anyone (not just vegans).

Although in the future, I’m interested in having my own booth or participating in a cooking demo, Saturday, we were simply there to share the experience, and soak up all the veg-friendly goodness. And of course, I was representing myself, Vegan on the Run.

Yesterday, I revisited several “On the Run” highlights from the first six months of Vegan on the Run. Since at the heart of each and every one of my days is plant-based cuisine, today I’ve decided to revisit the recipes that I’ve shared thus far. And so, I present to you a visual recap of the spread of vegan eats and drinks I’ve included on the blog since its launch date.

On yet another trek from Pensacola to St. Augustine, my counterpart and I decided to make a lunch pitstop in Tallahassee. I just couldn’t resist introducing him to Southern vegan cuisine at the infamous Soul Veg, noted as part of the largest chain of vegan restaurants in the world, operated under the Hebrew Israelite Community of Jerusalem.

Situated just outside of downtown in a modest building next to some railroad tracks is this diamond in the rough. And yes, that’s me creeping in the reflection.
